Peach Melba

A healthy recipe for a dessert as discussed on Channel 7's Today Tonight television program.

Serves 6 people as a dessert.

Ingredients

  • 100 g sugar
  • 1 vanilla bean split lengthwise (or 2 teaspoon vanilla essence),
  • 400 mL water
  • 3 ripe peaches, unblemished
  • 250 g raspberries or strawberries
  • 6 scoops of low-fat, vanilla ice-cream
  • 12 small mint leaves.

Preparation

Bring sugar, vanilla bean and water to boil in a small saucepan, stirring.

Poach the peaches for 10 minutes or until tender then remove.

Boil the syrup until reduced by half (approx 5 minutes). Set aside to cool.

Peel the peaches, cut in half, remove the stone and allow to cool.

Blend the berries in a blender.

Add some of the reserved syrup to achieve a flowing consistency. 

Push the puree through a fine sieve and chill.

Serving

To serve, using an ice cream scoop make 6 round ice cream balls.

Place each ice cream ball on a shallow dessert plate, place a peach half cut-side down on top and drizzle the berry puree over the top.

Serve immediately.
