'TIS THE SEASON TO BE HEALTHY
Those light and easy summer meals which include fresh salads and seasonal fruits are more than just a tasty holiday treat. There is growing scientific evidence to show that they also have significant health benefits.
The protective effects of fruit and vegetables are many and varied according to senior researcher Dr David Topping of CSIRO Human Nutrition.
"Fruit and vegetables contain substances known as antioxidants which scientists believe may offer protection against coronary heart disease and cancer," said Dr Topping.
"Antioxidants are also important in other ways. Vitamin C, for instance, is vital for the formation of collagen, bones, teeth and healthy gums. It helps the body resist infection and assists in the absorption of iron from foods."
Recent research has also shown the benefits of dietary fibre, a complex mixture of components found only in foods of plant origin including vegetables, fresh fruit, cereals and even those festive season favourites, dried fruits and nuts.
"Diets which are high in fibre may offer protection against several chronic diseases prevalent in Western countries such as Australia," said Dr Topping.
"These include diabetes, cardiovascular disease, bowel cancer and even constipation."
Along with cereal foods, vegetables, legumes and fruits such as bananas are good sources of indigestible or "resistant" starch, another food component which has been identified as a potential ally in the battle against Australia's high levels of bowel cancer and other bowel disorders, says Dr Topping.
"When you consider that fruit and vegetables are also rich in folate, iron and other essential minerals and vitamins, their importance in a healthy diet is clear.
"We are fortunate to have ample supplies of fresh, healthy produce here in Australia and summer is a great time to enjoy the benefits of healthy eating."
