The good oil on health

From vine to palate

Grapes growing in a vineyard.Flavour and aroma are difficult properties to measure in food products, particularly in the vast array of wine varieties produced in Australia. Grape berries and subsequent wine products have hundreds of compounds that contribute to their flavour and aroma. The Food Futures Flagship grape and wine research program is investigating these flavour compounds and the use of technologies to measure them. Read more.


Advancing Australian aquaculture breeds

A small tiger prawn swims in the water.Australia’s dynamic and diverse aquaculture industry extends across tropical, subtropical and temperate environments. Five species contribute 92% of the total gross value of the industry. The Food Futures Flagship is partnering with industry and other Australian research agencies to triple its value.  Read more.


Cybernose – Advances in Olfactory Biosensor Technology

This project is developing new ways to quantify the volatile organic compounds which give rise to the flavour and aroma of food. These compounds are important quality determinants and may also be used as proxies for a range of non-volatile chemical changes in food. Read more.

The Food Futures Flagship is a CSIRO initiative and part of the National Research Flagships program that aims to deliver scientific solutions to advance Australia's most important national objectives. One of the largest scientific initiatives ever mounted in Australia, it aligns closely with the Federal Government's National Research Priorities. The initiative brings together our national research resources to deliver breakthroughs in fields ranging from healthcare to light metals and the environment.
